Autumn Tart
Crostata Autunnale is a rustic Italian tart made from seasonal fruits such as apples, pears, and plums. The dough is simple to make and can be made ahead of time, making it ideal for entertaining. The tart is best served with a scoop of vanilla ice cream or a dollop of whipped cream for breakfast, brunch, or dessert.
Ingredients (serves 4)
For the pastry: see Short Crust recipe
For the filling
• 2 Williams pears
• 2 cooking apples
• 2 oranges
• 3 tablespoons of sultanas/raisins
• 20 almond biscuits
• 2 dessert spoons of sugar
• cinnamon
• shaved almonds
Procedure
Squeeze the oranges. Cut the fruit into small pieces and then place in a mixing bowl with the raisins to marinate with the juice from the oranges. Remove the short crust from the refrigerator and roll out on oven proof paper, arrange into the mould and arrange the border. Take the biscuits and break into crumbs between your fingers onto the pastry forming a uneven layer. Place the marinated fruit without the juice onto the pastry and biscuit followed by the squeezed raisins and lastly the shaved almonds. Powder the tart with sugar and a little of the cinnamon then place in a hot oven and cook for 40 minutes at 160°C.
