Torta Salata di Zucchini – A Traditional Italian Recipe

Zucchini quiche

Ingredients (serves 8)

• 1 sheet of fresh ready-made puff-pastry or you can use the ‘Pasta Brisee’ recipe
• 5-6 zucchinis
• 6 zucchini flowers
• 2 eggs
• 1 cup of fresh cream
• 2 tablespoons of grated parmesan
• salt and pepper
• 1 clove of garlic
• finely chopped parsley


In a saucepan, heat 3 tablespoons of olive oil with the garlic and some of the chopped parsley. Add the zucchini, chopped into small cubes. Cook over a flame, continuously moving the saucepan for
about 5 minutes. Add salt and pepper as needed. Leave to cool. Beat the eggs, adding a pinch of salt, the cream and the parmesan cheese. Roll out the pastry in a quiche dish or pie tin, add the zucchini and then cover with the cream/egg mixture. Add the zucchini flowers in the form of a flower. Cook in the oven for around 35-40 minutes at 175°C.
