Sformato di Porri is a traditional Italian dish from the Lombardy region in northern Italy. It is a savoury dish with leeks as the main ingredient, similar to a quiche or a souffle.

Sformato di Porri has a long history dating back to the Middle Ages, when leeks were a popular ingredient in Lombardy. The dish was frequently served at banquets and feasts, and it quickly became a Lombardian cuisine staple.

Ingredients (serves 4):

• 75 g of flour
• ¾ L of milk
• 75 g butter
• 3-4 leeks
• 4 eggs
• salt and pepper
• extra virgin olive oil

Procedure

Cut the ends of the leeks, discarding the green ends. Slice the leeks into thin rings. Heat oil in a skillet and saute the leeks until cooked but not brown. Now make a bechamel sauce. Over a low heat melt the butter, add the flour and mix with a whisk, keep stirring in the same direction, add the milk slowly and keep stirring. The mixture will become thick and smooth. In a food mixer, mix the leeks then stir them into the bechiamel sauce with 4 eggs until you obtain a smooth mixture. Place the mixture into moulds and then prepare a bain-marie. In a preheated moderate oven (150°C), cook for 20-30 minutes.

** You can replace the leeks with zucchini, parmesan, carrots, pumpkin, or other vegetables **
