Salsa di Frutta is a classic Italian fruit salsa made with fresh berries, cherries, and peaches. It’s a light and refreshing sauce that’s ideal for summer dishes. The fruit is cooked down with sugar and a touch of balsamic vinegar before being topped with fresh mint leaves. This salsa goes well with grilled chicken or fish, but it also goes well with a simple piece of pound cake. This delicious sauce is easy to make and can be tailored to your liking by adding different fruits or adjusting the amount of sugar.
Ingredients
• Fruit of your choice
• 2 tablespoons sugar
Preparation
Prepare the fruit, removing any stalks or seeds, place into a pan with the sugar and cook over a medium flame for 10 minutes, stirring constantly. Once this mixture is soft enough you then need to pass this through a sieve of some sort to form a liquid and remove any pips or seeds. If you wish you can also add half a glass of liquor – Grand Marnier, Brandy or Cointreau are all good (it depends on your taste). If you do add the alcohol, cook again in the pan for 5 minutes to take off the strong alcohol taste. It’s ready!
