Ingredients (serves 4)
• 500 g peas
• 2 garlic cloves
• a couple of sprigs of parsley
• 100 g diced pancetta
• 4 tbs extra virgin olive oil
• salt and pepper

Procedure
Put the peas, garlic and parsley in a pot and cover with cold water. Salt lightly and cook on a moderate flame for around 30 minutes. A minute before removing from the flame, add the pancetta and add salt and pepper to taste.
