Sage is a very fragrant plant with many health benefits that is widely used in the kitchen for fragrance and flavouring. Sage lends itself to a wide range of applications, including bread dumplings, potato boats, a simple chicken breast special, soup, and even sage biscuits.

Instead, today’s recipe is for fried sage stuffed which is a simple appetiser that is quick to prepare but also delicious and crunchy. We recommend using a cream of boiled potatoes as a filling for a vegan version. Consider how much of an impact you can make by preparing one of these unusual side dishes!

Ingredients (serves 4)

• large fresh sage leaves

• 100 g of flour
• anchovies
• 1 egg
• salt
• 3 table spoon of olive oil
• tooth picks

Procedure

Select the biggest sage leaves carefully. Wash them, then dry them by placing on some absorbent paper. Place in a mixing bowl and beat the egg with a pinch of salt. Dip the leaves in the egg. Between 2 leaves add an anchovy fillet and then secure them together with a tooth pick. Re-pass through the egg mixture then toss in the flour. Add immediately in the preheated oil, hot enough for fast frying. Fry very quickly and serve immediately.
