Ingredients (serves 4)
For the Francesina sauce
• 1 kg onion, thinly sliced
• 1 carrot, finely chopped
• 1 celery stalk
• 4 tomatoes, diced
Procedure
In a saucepan, sautè the onions, carrot and celery. Add the tomatoes. Salt and pepper to taste and
cook for 15 minutes.
For the boiled meat:
• 800 g beef
• 1 carrot
• 1 onion
• 1 celery stalk
Procedure
Simmer the meat for 2-3 hours. When the meat is ready, dice it and place it in the saucepan with the Francesina sauce. Cover with stock and simmer gently for a further 20 minutes until the stock is reduced.
** Any leftovers can also be served on hot toasted bread or used as a pasta sauce.**
