Vin Santo Icecream
Gelato, which translates to “frozen” in Italian, is a frozen Italian treat that was invented in the 16th century. Historians aren’t sure who invented it first, but one of the most popular versions of the story goes that Bernardo Buontalenti, a Florentine, invented a modern gelato. With his delicious frozen treat, he impressed Catherina dei Medici’s court.
Your gelato will taste just as good whether it’s made with Tuscan or Umbrian vin santo, Trebbiano, or Malvasia. When topped with whole or crumbled cantucci, it makes a delicious dessert. A decidedly made in Italy taste.
Ingredients (serves 4)
• 4 egg yolks
• 150 g fine sugar
• 150 ml vin santo
• 400 ml full cream milk
• 100 ml milk cream
Procedure
Whisk the egg yolks with the sugar until pale yellow and creamy, add the Vin Santo and mix it through. Heat up the cream and milk then add to the egg yolks and transfer to a bain-marie. Cook for a few minutes, stirring constantly until the cream coats the back of a spoon. Let it cool and put in a gelato machine. When the gelato reaches a thick creamy consistency put it into the freezer for 20 minutes and serve.
