Ingredients (serves 4)

•600 g fresh porcini mushrooms

•flour

•salt

•oil for frying

Procedure

Remove the stalks of the mushrooms and clean the cap and the stalk with a knife. Cut into thin slices, dip into the flour and fry in the boiling oil. Cook for 3 minutes, then place on kitchen paper to dry. Add salt and serve hot.

** It’s important not to cook the mushrooms for too long because they will taste bitter **

** Another tip is to half fry the mushrooms and then place them on the absorbent paper. Then just before serving drop them in the oil to heat and crisp, they will be less oily **
