Recipe: Florentine-Style Peas

The traditional recipe of Florentinestyle Peas

Servers 4
• 500g peas
• 2 garlic cloves
• a couple of spring of parsley
• 100g diced pancetta
• 4tbs extra virgin oil4
• salt and pepper
• olive oil

Put the peas, garlic and parsley in a pot and cover with cold water. Salt lightly and cook on a moderate flame for around 30 minutes. A minute before removing from the flame, add the pancetta and add salt and pepper to taste.
