• 800 g green beans, with the tips trimmed off
• 400 g peeled chopped tomatoes
• ½ red onion, chopped finely
• 2 garlic cloves, chopped finely
• 1 carrot, chopped finely
• 100 ml olive oil
• 2 pinches of salt
• 1 pinch of ground black pepper
Procedure
Sautè the onion and carrot in the oil. Add the green beans and cook for a few minutes. Add the tomatoes, salt and pepper and simmer for about 30 minutes until the green beans are soft.
