Vanilla Cream
Vanilla cream is a simple cream with a delicate flavour that is perfect for filling your favourite cakes, whether for a birthday party or to serve a simple paradise cake. This cream is made in the same way as custard and has the same classic and delicate flavour, but it differs in the addition of whipped cream, which makes it even lighter, and the intense vanilla flavour.
Ingredients
• 6 eggs
• 100 g sugar
• 1/2 L fresh cream
• 1 sachet of powdered vanilla
Procedure
Heat the cream with the vanilla on a medium flame. In a bowl lightly beat the egg yolks and the sugar. When the cream is almost boiling add the sugar and egg mixture, and reduce the heat to a low flame. Keep mixing continuously until the creamy mixture reaches 95°C. Allow to cool slightly before using as a base for all types of desserts. Can be used also in the decoration of various tarts and cakes.
