Chickpeas, also known as garbanzo beans, have been a staple legume in the Mediterranean for over 7,000 years and are thought to be the first legume cultivated by humans during the Neolithic period. Boiled chickpeas, the perfect recipe for perfect chickpea or bean cooking, the methods are identical, Chickpeas, unlike lentils, must be soaked overnight or at least 12 hours before cooking.

Ingredients (serves 4-6)

• 400 g dry chickpeas
• 2 garlic cloves
• 2 tbs extra virgin olive oil
• 1 sprig of rosemary
• 1 tsp salt
• a few peppercorns

Preparation

Soak the chickpeas overnight and put them in a pot with 2 L of water. Add the water, garlic, oil, rosemary, salt and pepper. Cover with a lid and place over a low flame. The water must simmer gently and not boil. The chickpeas will take around 2 hours to cook. Let them cool in the coking juices. Before serving, heat them up until warm, taste for salt and black pepper and drizzle with good
extra virgin olive oil.
