Ingredients (serves 4)

• 1 cauliflower, divided into flowerettes, stalk chopped
• 300 g peeled chopped tomatoes
• 2 garlic cloves, crushed
• 2 pork sausages, skinned and chopped
• 100 g black olives, pitted
• 100 ml white vinegar
• 100 ml olive oil
• 1 tbs rock salt
• 1 tsp salt
• a pinch of pepper

Procedure

Bring a pot with 4 L of water and the vinegar to the boil. Then add the rock salt and blanch the cauliflower in it for 3 minutes from the moment the water comes back to the boil again. Drain it and set aside. Sautè the garlic and the sausages with the olive oil. Add the cauliflower, salt and pepper. After a few minutes, add the tomatoes and simmer for about 20 minutes. Add the olives 5 minutes before turning off the heat.
