Tomato and Basil Bruschetta
This is one of the easiest appetiser recipes to make. Once you have prepared this tasty starter once, you will always remember how to do it.
2 large mature tomatoes, cubed
2-3 garlic cloves, peeled.
Eight basil leaves, ripped
extra-virgin olive oil oil
salt and pepper.
300 g Tuscan-style bread
Mix the tomatoes, basil, oil and salt and pepper together in a bowl. Set aside for at least 15 minutes. Toast the bread and rub one side of it with the garlic cloves. Pour the tomato mixture onto the bread and serve.
Crostini and Bruschetta are always done in the OVEN and NOT under the grill.
